Asian Salad

I made some Asian pulled pork sandwiches yesterday and wanted something light to accompany them, so I decided on sticking with the Asian theme and made this tasty little salad. Great as an appetizer, side, or as the main dish! Add grilled chicken, seared shrimp… have fun with it!

Serves 2-6, depending on whether you’re using it as an  appetizer, side or entrée.

Ingredients (dressing):
1/2c Sesame Oil (or Olive Oil if you don’t have Sesame)
1/3c Rice Wine Vinegar
2tbsp Honey
1tsp Salt
1/4tsp Ground Black Pepper
1/4tsp Ground Ginger
2tsp Granulated Sugar
2tbsp Fresh Scallion, chopped

Ingredients (salad):
2c Bok Choy, chopped
1c Snap Peas, julienne
1 Medium Carrot, julienne
1/2 Red Bell Pepper, julienne
1c Crispy Wonton Noodles

Well, it doesn’t get much easier than this. Simply whisk together all of the ingredients for the dressing. In a large bowl combine all of the ingredients for the salad. Add as much or as little dressing to the salad as you want, toss well… And that’s it, you’re done. Enjoy!
