Elvis Bread… banana, peanut butter & bacon!

Elvis Bread

So the other day I cooked a nice little family dinner, then afterwards got a big ‘ole guilt trip that there wasn’t anything in the house to have for dessert… Gee thanks to my wife and kids, I guess cooking DINNER doesn’t suffice anymore. Well anyway, in response to said guilt trip I managed to quickly throw together a peanut butter banana bread that was pretty darn delicious. Afterwards I started thinking… Elvis was a huge fan of peanut butter, banana & bacon sandwiches, what if I did that with a bread? Well yesterday I did, and it was deeeeeeeee, wait for it, licious! So here’s the recipe. It’s super easy to make and a big time crowd pleaser. My kids went absolutely nuts over it and my wife begged me to never make it again because she couldn’t stop eating it… lol.

Serves: The family.

1 1/2c All Purpose Flour
1/2c Granulated White Sugar
1/2c Light Brown Sugar
1/2tsp Baking Powder
1/2tsp Baking Soda
1/2tsp Salt
1 Egg
1 1/4c Mashed Ripe Bananas, roughly three bananas
8tbsp Unsalted Butter, melted
2/3c Peanut Butter (I used crunchy)
1/2lb Bacon, crispy
1tsp Vanilla Extract

Heat your oven to 350F.

Pre cook your bacon and break it into pieces.

Lightly grease a 9″x5″ loaf pan.

In a mixing bowl cream the sugars and melted butter until a mousse is formed, then add the egg, vanilla extract, peanut butter and mashed bananas and mix well. Add the flour, baking soda, baking powder and salt, mix until a batter is formed. Lastly add the crispy bacon and gently mix to incorporate. Pour the batter into the greased loaf pan. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Once your toothpick is coming out clean from the bread remove it from the oven and let it rest at room temperature for least 15 minutes before cutting and serving.

One for the money, two for the show, three to get ready now go cat go… and eat some delicious bread!

  1. I’ve always loved banana and peanut butter but adding the bacon (which I do love on it’s own) scares me… but I’m pretty sure it would make my kids super happy so I may have to try this for them!


    • Actually the bacon makes for a nice salty little crunch. It doesn’t permeate the entire bread, you only taste it when you actually get a bite. Trust me Emily, if you like banana, peanut butter & bacon independently, you’ll love them together in this bread!
